Mushroom & Samp Soup (Starter)
Serves 6
Ingredients
45ml (3 tablespoons) sunflower oil
1 large onion, diced
1 green pepper, diced
3 cloves garlic, crushed
2 carrots, diced
2 bay leaves
30ml (2 tablespoons) fresh thyme, chopped
250g button mushrooms, sliced
250g mushrooms, sliced
2litres (4 cups) vegetable stock
375ml (1 ½ cup) cooked ACE SAMP
salt and black pepper, to taste
herbs to garnish
Method
1. In a large saucepan heat oil and fry onion, green pepper, garlic, ginger and carrots until tender, about 5 minutes.
2. Add bay leaves, thyme and mushrooms, cook until mushrooms are tender, about 5 minutes.
3. Pour in vegetable stock and bring to a boil. Add cooked samp, continue to simmer for 20 minutes. Stirring soup occasionally.
4. Season with salt and black pepper, to taste. Ladle into bowls and serve garnished with fresh herbs.
Quick Beef Curry on Maize Rice (Dinner)
Serves 6
Ingredients
Maize Rice
250ml (1 Cup) ACE MAIZE RICE
750ml (3 Cups) water
5ml (1 teaspoon) salt
15ml (1 tablespoon) butter
Beef Curry
1 onion, chopped
2 cloves garlic, crushed
1 green pepper, diced
2 carrots, diced
2 potatoes, diced
45ml (3 tablespoons) curry powder
1 can (410g) All Gold Indian style chopped tomatoes
500g stewing beef
250ml (1 cup) beef stock
salt and cayenne pepper to taste
fresh coriander leaves
Method
1. Rinse ACE Maize Rice. Under a running tap. Cover ACE Maize Rice with fresh water and bring to boil.
2. Turn heat to medium and cook for + - 45 minutes or until desired texture is reached.
3. Stir occasionally. Add salt and butter to taste.
4. For the curry; heat oil in a saucepan and fry stewing beef until brown, remove and set aside.
5. Add onion, garlic and green peppers, fry until soft. Add carrots and potatoes. Cook for 3 minutes.
6. Add curry powder and tomatoes, cook for a further 10 minutes, return beef add stock, bring to a boil and then simmer gently for 60 minutes.
7. Serve beef curry over cooked Maize Rice
Granadilla Maize Meal Cake (baking)
Preparation and cooking time: 60 minutes
Ingredients
250ml (1 cup) ACE SUPER MAIZE MEAL
180ml (2/3 cup) Golden Cloud cake flour
3ml (½ teaspoon) salt
200g (1 cup) castor sugar
4 eggs
5ml (1 teaspoon) vanilla extract
125ml (1/2 cup) natural yoghurt
1 can (170g) granadilla pulp
Method
1. Preheat oven to 180 degrees C. Grease and flour a 23cm ring cake tin.
2. Sift together the Ace maize meal, flour, salt and baking powder, set aside.
3. In a medium bowl, beat together butter and sugar. Beat in eggs, one at a time, stir in the vanilla and granadilla pulp.
4. Add dry ingredients alternately with the yoghurt, stirring after each addition. Pour cake mixture into the prepared cake tin.
5. Bake for 45 to 50 minutes in oven, until a skewer or a knife inserted in the centre comes out clean.
6. Cool cake in the tin on a wire rack for 30 minutes invert onto a serving plate. Dust with icing sugar or cover with granadilla flavoured glace icing. Serve with ice cream or cream.
